Often performing with his "Pagan Love Orchestra," Jai's music is influenced by his R&B roots of the 1960s and 70's and by traditional Indian music which he first became familiar with at age 19. When he was 19, Jai moved to California to become a student of Khansahib for traditional voice training and to learn the sarod, a 25-stringed Indian instrument.

Jai Uttal's 1997 album Shiva Station continues his eclectic fusion of Indian musical traditions with jazz and electronic elements. Sinuous, spontaneous pieces like "Guru Brahma," "Bhajore," and "Jaya Jagadambe (She Who Tears Apart Thought)" combine a loose, improvised feel with lush arrangements that include sitars, tablas, violins, banjos, trombones, and electric guitars. The Pagan Love Orchestra is Jai singing lead plus playing harmonium, dotar, keyboards, gubgubbi, mandolin, oud and banjo; Peter Apfelbaum playing soprano and tenor saxophones, drums, conga, organ and piano; Will Bernard playing electric guitar; Geoffrey Gordon playing bandir, dunbek, bongoes, tabla, kanjira and congo; Bruce Linde on bass; Irene Sazer on violin; Rob Viack on keyboards; Steve Gorn on flute and bansur; Fazai Qureshi on tabla and dholak; and, Maia Ganguly lead and backup singer.
